Under the culinary leadership of Chef Dallas Cuddy and a dedicated team comprising Peter Hildebrand, Iksun, and Seungmi Kim, The Terrace has not just embraced sustainability—it's become a shining example in the hospitality industry for eco-conscious practices.

The PLEDGE™, a third-party certification and benchmarking system based in Singapore, empowers restaurants, hotels, and cafeterias to reduce food waste, cut costs, gain recognition, and contribute to local sustainable solutions. This certification reflects The Terrace's dedication to responsible dining and its significant strides toward a more sustainable future.

Chef Dallas Cuddy and The Terrace team have earned the prestigious Silver Certification from The PLEDGE™ with an impressive score of 88%, showcasing their exemplary leadership in sustainability. Leveraging innovative solutions like the FIT Food Waste Tech, Grand Hyatt Seoul has reduced its carbon footprint by 7,987 kg of CO2 emissions and saved approximately 3,195 kg of food from January to May 2023—a tangible reflection of The Terrace's dedication to a circular and sustainable food system.
